RECIPE FOR DR. PINKY





Dr. Pinky, I remember bringing these meatballs to your home shortly after the birth of your son, I guess you've waited long enough!  It's your own fault for moving across the country, haha, here's the recipe:

MEATBALLS IN MARINARA SAUCE:

Ingredients for Meatballs: MAKES 30 MEATBALLS
3 lb. ground beef (80-20 mix) or turkey
2 Tablespoons minced onion
1/2 cup water
1/4 cup of bread crumbs
1/4 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon Lawry’s Season Salt
1/2 teaspoon Italian Seasoning (oregano, thyme, rosemary, basil, sage, parsley)
1/4 cup of finely grated Parmesan cheese

Directions:
1. Preheat oven to 375 F
2. In a large bowl, combine all ingredients until well mixed.  
3. Gently form your meatballs to desired size (do not pack them!) and set aside on a foil lined baking tray
4. Place tray in oven and bake for 20 min. turning the meatballs after 10 min.  
5. Remove meatballs from oven and place in marinara sauce (recipe below) and simmer on medium heat for 15 min. 
MAKES 30 MEATBALLS

Ingredients for Marina Sauce:
1 28oz can of Tuttoroso crushed tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 teaspoon Lawry’s Season Salt
1/4 teaspoon of salt
1/4 teaspoon Italian Seasoning (oregano, thyme, rosemary, basil, sage, parsley)
1 Tablespoons of sugar

Directions:
1. In a sauce pan, combine all ingredients and simmer uncovered for at least 30 min. to allow flavors to blend





** I serve as sliders, on long toasted rolls or over angel hair pasta and garnish with parmesan cheese and crushed red peppers **

  1. I just cooked the meatballs. They were absolutely delicious and moist! Acacia remembers having them in PA. She said to her Dad "These are the meatballs that Mom's friends brought to us. Remember? We all loved them?"
