RECIPE FOR DR. PINKY





Dr. Pinky, I remember bringing these meatballs to your home shortly after the birth of your son, I guess you've waited long enough!  It's your own fault for moving across the country, haha, here's the recipe:

MEATBALLS IN MARINARA SAUCE:

Ingredients for Meatballs: MAKES 30 MEATBALLS
3 lb. ground beef (80-20 mix) or turkey
2 Tablespoons minced onion
1/2 cup water
1/4 cup of bread crumbs
1/4 teaspoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon Lawry’s Season Salt
1/2 teaspoon Italian Seasoning (oregano, thyme, rosemary, basil, sage, parsley)
1/4 cup of finely grated Parmesan cheese

Directions:
1. Preheat oven to 375 F
2. In a large bowl, combine all ingredients until well mixed.  
3. Gently form your meatballs to desired size (do not pack them!) and set aside on a foil lined baking tray
4. Place tray in oven and bake for 20 min. turning the meatballs after 10 min.  
5. Remove meatballs from oven and place in marinara sauce (recipe below) and simmer on medium heat for 15 min. 
MAKES 30 MEATBALLS

Ingredients for Marina Sauce:
1 28oz can of Tuttoroso crushed tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 teaspoon Lawry’s Season Salt
1/4 teaspoon of salt
1/4 teaspoon Italian Seasoning (oregano, thyme, rosemary, basil, sage, parsley)
1 Tablespoons of sugar

Directions:
1. In a sauce pan, combine all ingredients and simmer uncovered for at least 30 min. to allow flavors to blend





** I serve as sliders, on long toasted rolls or over angel hair pasta and garnish with parmesan cheese and crushed red peppers **

PAPERLESS IN 2011??

I spent a good part of today at work organizing my schedule for the new year.  I will continue to use both paper and electronic calendars.  I like the calendaring capabilities of Outlook and my iPhone but I still need a Daytimer and wall calendar as a backup and for quick reference.  Maybe next year I'll go paperless.

Will you manage your schedule manually, electronically or both?

NEW YEAR'S EVE PARTY FOR TWO

I've been using these natural products to color my hair for more than 8 months now, I love the coverage of my gray which was very resistant to chemical dyes and grows at the speed of light.  Here's a few pics of my usual results:




As I mentioned my hair grows quickly so I usually apply every two-three weeks to my roots and every other month to my entire head to maintain even color.

Yea, its bad!  The holidays, entertaining house guests and let's keep it real, my laziness have resulted in a wide raccoon stripe and headband of white hair.  

Although there are many pros to using these natural plants as hair dye such as stronger, smoother, shinier hair. There are a few cons, its messy and very time consuming (about 12 hours from start to finish) because I do a two step process with the Henna and Indigo.  Check in tomorrow evening to see my results!

NEW BEGINNING, 2011

MERRY CHRISTMAS!!!!

Yea I know, I'm late!  I did manage to communicate with quite a few of you yesterday.  I'm still exhausted from all the preparation for and hosting Christmas dinner.  I'm getting too old for this.  I don't know how my mother did this for so many years.  I consider myself an organized person but I found myself spinning in circles on Friday night trying to get this together.  The real panic set in on Saturday morning when I discovered that an entire Crate and Barrel bag containing table linens and accessories (napkins, napkin rings, placemats, etc.) could not be found.   I was able to put the table together but it was not what I planned so I spent a few hours searching and I still haven't found that damn white and black bag.  I know it will show up one day and I will laugh at the thought of how upset I was.  This is what I managed to put together.



To me it looked a bit bare but all of my other accessories were gold and I was going with a silver and white theme.  Dinner was delish, and there are pics of the feast but I've also lost my damn camera somewhere in this house.  I'll post those pics at a later date.  

I was in bed by 9 p.m. as we decided to rise early to shop the sales with our Christmas cash before the blizzard!  I managed to find a few things but overall I was not in the mood and our group of 7 was just too much to keep up with.  I recently had an epiphany that I really like to shop alone, I get so much more accomplished.  Also,  I feel I can make better decisions when I don't have someone else's agenda to consider.  I hate shopping with folks that don't know what they want and just wander around aimlessly (my Mother), it's such a waste of time.  

This evening, I've washed my hair and I'm deep conditioning as I type this post.  I know, I'm always doing something hair related.  My mane does take up a lot of my time but its worth it.  I'm hoping for, actually I'm assuming tomorrow will be a snow day and I'll be able to get through a few magazines and get some sleep.  Oh btw, one of my gifts was a subscription to Essence magazine, thanks, Davis!  Looks like the issues will keep piling up and reading them will be on my to do list for yet another year.

I love the Elomi line that's available at Nordstrom because they are very supportive but still have a little sex appeal but boy do you pay for it.

MOTHER'S CHILI RECIPE FOR JADIE - ONLY CUZ SHE'S PREGGERS






Ingredients:
3 lb. lean ground beef or turkey
1 cup chopped onion
1 cup chopped green pepper
1 can Tutturoso crushed tomatoes (28oz)
1 can Hunts diced tomatoes (14oz)
1 can of Red Kidney beans (14oz), drained
 1 cup water
2 Tablespoons chili powder
1 teaspoon garlic powder
1 Tablespoon Tony Chachere’s Creole Seasoning
1 Tablespoon Lawry’s Season Salt
1 teaspoon Italian Seasoning (oregano, thyme, rosemary, basil, sage, parsley)
2 Tablespoons sugar
Directions:
1.      In a large pan, heat the olive oil and add the onions and green peppers, cook until they are translucent.
2.      Transfer onions and peppers to a heavy soup pot
3.      Brown ground beef and transfer to soup pot.
4.      Add tomatoes, beans, water and spices to pot. Mix well.
5.      Bring to a boil then reduce heat and simmer, covered, stirring often for 2 hours.
SERVES 6
** I usually garnish with Cooper Sharp or Cheddar Cheese and crushed red peppers **

How many magazines do you currently subscribe to? Do you read each issue?  I currently subscribe to about 10 mags and periodicals and here's the stack that I have yet to read this month:


When I was in school I remember not being able to afford to buy a single issue of Essence let alone having a monthly subscription.  I know this a waste of money, but I love this form of media and I don't think I want to give it up.  I've also spend more scrilla on containers to keep them organized around the house.  I guess I could go to Borders and chill with a latte and read a few issues but that would take way too much of my free time which is limited.

So yall know I'm hairy as hell right! Well I can't find my damn Tweeze, last seen on Friday a.m.  If I don't find it soon there might be a very hairy situation come Monday morning.  I've checked all the usual places and I'm at a lost.  I might have to make a trip to bed bath and beyond for a back-up.
